The intervention focused on returning authenticity to each space, removing additions accumulated over generations to allow the original architecture to breathe again. The result is a masseria that preserves its historical essence and at the same time dialogues with a contemporary sensitivity oriented towards sustainability and care for the environment.

The Pulse of Present Life

The current life of Masseria Palombara unfolds in a landscape of one hundred hectares cultivated under principles of organic agriculture and permaculture. The centuries-old olive trees coexist with almond trees, palm trees and an orchard that sets the rhythm of the kitchen. The energy comes from renewable sources, the circular economy guides every decision and the in-house carpentry transforms recovered materials into furniture and objects that prolong the life of wood and iron. Everything responds to a philosophy that privileges harmony with the territory and environmental responsibility.

Hospitality is expressed in twenty rooms and two suites that combine sobriety and elegance. Neutral tones, natural fabrics and handcrafted pieces create environments that invite you to relax. Some suites offer private pools, intimate gardens or terraces from which the landscape opens up like a silent horizon. The Grand Suite, with hammam, fireplace and swimming pool surrounded by greenery, proposes an experience that is close to the idea of ​​a personal refuge within the vast territory of the masseria.

The wellness area occupies the former underground granaries. Light penetrates through small openings in the tunnel, the thermal pool envelops you in gentle heat and the hammam excavated in the 16th century cistern combines Roman and oriental traditions. The worn stones lead to a free tour that includes a sauna, cold showers, infusions, massages and the sound of the fire that accompanies the silence. Time seems to expand in this space that invites introspection.

The cuisine interprets the territory with absolute fidelity. The ingredients come from the garden or from small local producers who work with biological or biodynamic methods. The dishes celebrate seasonality and Salento tradition, with a creativity that respects the essential flavors. Outdoor dinners, illuminated by candles and accompanied by light conversations, recover the original meaning of conviviality. The cantina brings together natural wines and labels from Pugliese micro-productions that express the identity of the territory with character and sincerity.

The archaeological site within the property adds a historical dimension that surprises those who visit it. A messapic cave from the 7th century BC, a Colombian tower from the Quattrocento and a small cave church excavated in the rock make up an itinerary that spans millennia. Walking through these spaces allows us to understand the continuity between past and present, as well as the cultural depth that characterizes this part of Salento.

Palombara’s atmosphere is distinguished by its discretion. The light filtered through the olive trees, the silence that accompanies the hours, the absence of televisions in the rooms and the freedom of schedules create a feeling of calm that many guests seek to repeat.
